Slightly green, slightly grassy, extremely refreshing China tea. Too often overlooked, Oolong is one of our absolute favorites because it has the richness and power of a black tea, combined with the aromatic herbiness and cleansing feel of a green tea. The tea leaves are plucked, allowed to semi-oxidize, rolled into small beads and then roasted. Describing the flavor of this delectable brew we find ourselves falling into the language of fine wine or Scotch whisky; there are floral, nutty and buttery notes, accompanied by honey, grass, fresh herbs and toasted wood. Steep for at least three minutes and enjoy on its own, milk and sugar are up to you or alongside herby or smoky dishes, wok-fried greens or even chocolate.
